Mulaikattiya payaru kulambu

 

Ingredients

    Green gram sprouts [mulaikattiya pachai payaru, matki sprouts] – 1 cup
    Sambar onion [shallots] – 5 [peeled, chopped]
    Garlic – 2 cloves [mashed]
    Green chilli – 1 or 2
    Dry red chilli - 1
    Curry leaves – 1 spring
    Turmeric powder – ¼ tsp
    Red chilli powder – ¼ tsp
    Roasted cumin powder – ½ tbsp
    Roasted Coriander powder – ½ tbsp
    Mustard seeds – 1 tbsp
    Bengal gram – ½ tbsp
    Urad dal – 1 tbsp
    Jaggery – ½ tsp [grated]
    Oil – 1 tbsp
    Salt to taste
    Water as needed

Method

    For sprouts:-Wash & soak green gram over night. Then drain water & place it in a hot box, cover it & leave it overnight.
    Pressure cook Green gram sprouts for 1 whistle.
    Heat oil in a pan add mustard seeds, let it splutter. Then add Bengal gram & urad dal sauté.
    Add onion, garlic sauté till light brown.
    Add curry leaves, dry red chilli & green chilli sauté
    Add pressure cooked Green gram sprouts, turmeric powder & red chilli powder let it boil.
    Add cumin powder, coriander powder & salt let it boil.
    Finally add jaggery mix well then cut off heat serve hot with rice, chapatti, paratha, puttu, idiyappam, idli or dosa
